The base cost of opening the doors every day,is basically $620.00. this includes rent,payroll,utilities,stock and all contigents. On average,the days have run like this....... Mon,$670.00/$725.00 tues,$670.00/$725.00 wed,$700.00/$850.00 thur,$730.00/$900.00 fri,$750.00/$925.00 sat,$1250.00/$1400.00 sun,$975.00/$1200.00 These numbers have been pretty consistent,except for the last month and a half,where they have fluctuated wildly. Example...we had a $620.00 saturday,,then a $1200.00 tuesday.....pretty wierd. Of course,on slower days,your cost will be lower as well,,as you wont use so much product,or payroll(send em home if its slow). example;If you had a day that grossed only $500.00,your daily cost for that day may only be around $410.00(which includes ALL expenses). If you had a day where you grossed $2500.00 then of course your cost will rise a bit to accomidate the product required to generate that revenue,,but the utilities and payroll would remain the same,so that would be extra money in your pocket!!:) 2. As for the cost of goods,If you would simply email me(or call me)a fax number,I would be more than happy to fax some of our invoices to you(there would be too many to list in this email). 3. The rent here is $2000.00 per month,,but this includes all taxes,as well as on site maintenance and membership in the plaza merchants assc.The onsite maintenance would cost an arm and a leg if you had to hire someone every time you needed something done,,here,it is included in the package!!! subnote....The rent is already factored into the cost of running the store every day. 4. Hours of operation are as follows. mon thru fri 6am to 4pm sat-7am to 3pm sun-7am to 2pm. 5. Man hours needed. During the week,(not including yourself) mon- fri,you will need two additional people. The way we usually do it is we will have one person work until noon,then another comes in until four...But we have had some who work whole shifts(7am to 4pm).(the crew comes in an hr after we open) sat-sun,you will need three other people besides yourself,,so a total of four people. (again the crew comes in an hr after we open,so the payroll hrs would be 8am to close). 6. Wholesale/retail%%. At the moment we only have six wholesale accounts for the bagels. 1.American Food and Vending 2.Meme's cafe. 3.Cedar street cafe. 4.Nancy's #1 5.Nancy's#2 6.Double Tree Hotel. This averages about $325 a week extra. However, American Food and Vending would like to expand the orders they are getting,as well as the kitchen at Bristol meyer squib. This would result in an increase in the wholesale profits by about $1200.00,but we are not prepared to make that kind of commitment to them as we are trying to sell the restaraunt and get out,,,HOWEVER,,,if you were interested in making a commitment to them like that and increase your revenue,I would be more than happy to make all the arrangments,as well as introduce you to everyone you would need to know and show you how the system works and how to put together orders and coordinate your bagel orders to match your output. So in short,,our wholesale end of the business provides a very small amount of the revenue(but you can change that if you are inclined to do so). In closing,I hope I have answered all of your questions adequately,also,I would like to extend an open invitation to you and your family,or friends(or both) to come in and take a look around and see for yourself how things are running here.
