Could it be that restaurant owners do not take for granted that patrons will patronize if only they open the doors?or could it be that they are finally starting to care.Or could it be that they genuinely want to give diners a bang for their buck.Whatever the case I dont just think "I know"that it is the right thing to do. I was there all along, I saw it coming and I saw it going away, Isaw them succeeding and I saw them fail miserably (and justyfiably and deservedly so). I saw a restaurant in Dallas Texas spend over $5 000 000 and fail simply by following the train of thought that "If you open them the'll come!"arent they (the customers)a bunch of suckers after all? Give them the glitz and you'll be another Ritz!All those casualtyes just for thinking that customers are a bunch of suckers!I taught many of todays star chefs how much glamour can fresh pasta add to the menu. I taught and couched a lot of them on the importance of not only making fresh past but also cooking it "Fresh". The ones who listened are thriving themany others are littering the landscape of failure.Dont be a line cook calling yourself chef! be a chef act modestly give value to the people that give you the ultimate compliment by deserting their kitchen(clean) and coming to yours! give them value and be proud, they'll come back.
